Ingredients:
- 1 yellow onion
- 1 bag of green lentils
- 2 stalks of celery
- 2 bay leaves
- 4 cloves of garlic
- 1 can of tomato sauce
- salt & pepper to taste
- any kind of small pasta
Recipe:
Soften your onion in some olive oil along with 4 cloves of garlic. Add one bag of dried green lentils (rinsed) and 2 chopped stalks of celery along with 2 chopped carrots. Add your bay leaves, tomato sauce, and salt & pepper to taste. I usually just eyeball the water but it's probably around 6 cups. let it cook for at least an hour. the longer it cooks, the thicker and more stew-like it gets. Finally, add in some (already cooked) pasta, and voila! 

Serve with a fresh squeeze of lemon and top with avocado. You can also throw in fresh parsley or any other greens you have on hand. This recipe is so hearty and surprisingly easy!
